Farmhouse B&B in Sonoma
My friend Jamie and her new husband stayed at the Farmhouse for a few days after their amazing wedding in Heildsburg, CA she had these delicious oatmeal pankcakes there and asked them for the recipie, they gladly gave it to her, and she passed it to me. I tried them last week and they are the best pancakes I have ever had! Try them, you will love!
2C old fashioned oats or quick cooking oats 1/2 C all purpose flour 3T sugar 1t baking soda 1t baking powder 1/2t salt 2 1/2 C buttermilk 2 LG eggs 1/4 unsalted butter, melted 1 t vanilla extract (Addl melted butter for brushing skillet) Fresh berries, preserves, syrup, whipped cream, etc for topping
**They also said they sub some of the sugar for maple syrup**
Combine first 6 ingredients. Whisk buttermilk, eggs, 1/4 melted butter and vanilla. Add to dry ingredients. Whisk until blended but lumps OK. Let batter stand to thicket about 2 hours!! Or do day ahead and refrigerate.
Preheat oven to 250 - heat large skillet over medium heat. Brush skillet with melted butter. Ladle batter by 1/4 cupfuls into skillet. Cook pancakes until bottoms are golden brown and bubbles form, approx 2 minutes. Turn over, cook until bottoms are golden, approx 2 min. Transfer to baking sheet. Keep warm in over. Repeat!
